Thank ya, thank ya very much….. for the cookies.

Last night, I came home from my camp job and found that the Nerd had cleaned the place. Dishes were washed. Laundry was done and folded. The trash had been taken out. I think things might have been swiffered.

For a moment, I thought I was in the wrong house. It’s an easy mistake to make, right?

I was in the right house, and was deeply impressed by the effort put forth. More than being impressed (and grateful), I was also relieved of my normal ritual of spending my first day off cleaning.

What does one do when they have a little extra time and a really great fiance?

They bake, of course!

These bad boys were on sale for a dollar, so I got a bunch.

BUT, I always feels like a horrible, lazy, cheater when I just add eggs and butter and stir, so I decided to shake things up a little bit. So I invented Elvis cookies.

I heard once that Elvis used to eat peanut butter and bacon sandwiches (I’m not sure if that’s even true), and the salty/sweet combination has always been a favorite of mine. So I decided to go for it, using only things we already had in the house.

Elvis Cookies

1 chocolate chip cookie mix, and all the things that you mix calls for (or make your favorite scratch recipe).

1/2 cup of peanut butter

1/4 cup of bacon bits

Mix it all together, being sure to stir well because those bacon bits are going to want to clump up. Also, I was most successful when I went a little light on the butter, because the peanut butter added some oils.  Use a spoon to scoop cookies onto a pan lined with parchment paper. Bake at 350 for 8-10 minutes.

Serve to your (now) adoring fans. The Nerd took some of ours to work for his lunch dessert, and the rest came to knitting night with me.
